Matcha Soft Serve
Ingredients
Base
- 1 ½ cups whole milk
- ¾ cup heavy cream
- ½ cup granulated sugar or 6 tbsp honey or maple syrup
- 3 tablespoons ceremonial grade matcha sifted
- 3 tablespoons hot water 170–175°F, not boiling
- 1 teaspoon vanilla extract
- Pinch fine sea salt
Texture Boosters:
- 1 tablespoon milk powder
- 1 teaspoon honey keeps it soft + scoopable
Instructions
- Bloom the Matcha (Don’t Skip This)
- In a small bowl, whisk the sifted matcha with hot water until smooth and glossy.
- In a separate bowl, whisk together: Milk, Heavy cream, Sugar, Vanilla, Salt, Milk powder and Honey.
- Add the matcha mixture and whisk until fully combined with no streaks.
- Pour into your Ninja Creami XL pint container.
- Freeze for at least 12 hours (completely solid).
- Insert the frozen pint into your Ninja Creami XL and run: Ice Cream or Gelato cycle
- Then Re-Spin for Soft Serve Texture
- If the texture looks crumbly: Add 1–2 tablespoons cold milk then run a Re-spin (for that dreamy soft serve consistency)
