If I Am Wrong I Am Right
This dish was born from the covid lockdown and is a celebration of unexpected perfection. The tender, flaky cod is paired with a rich, umami-forward sauce that balances sweetness, acidity, and depth, often featuring ingredients like pumpkin, ginger, and coconut.
RISO Camouflage
Inspired by the patterns of camouflage, this risotto is infused with a blend of natural ingredients like mushrooms, herbs, and squid ink to create its earthy, artistic appearance. Each bite delivers layers of umami, paying homage to both nature and Bottura’s signature fusion of tradition and innovation.
Parmigiano Reggiano in Five Ages & Textures
A tribute to Modena’s most famous cheese, this dish presents Parmigiano Reggiano in five different ages and textures and my personal favorite dish. The components are: Parmigiano and ricotta demi-soufflé: Made with 40-month-old cheese, Parmigiano sauce: Made with 36-month-old cheese, Parmigiano foam: Made with 36-month-old cheese, Parmigiano frico: Made with 40-month-old cheese and lastly Parmigiano air: Made with 50-month-old cheese.
The Crunchy Part of the Lasagna
A playful reinvention of classic Italian lasagna, this dish highlights Massimo’s favorite part, the crispy, golden edges. Here, a crispy sheet of pasta is dyed in the colors of Italy, atop a rich ragu and béchamel, creating a beautiful interpretation of a classic lasagna.
Beautiful Psychedelic Spin Painted Veal
Inspired by Damien Hirsts’ spin art, this dish reinvents veal with a splatter of rainbow sauces, topped with a rich reduction sauce. You are also given a slice of bread for “scarpetta”, meaning to wipe the plate clean and savor every drop of those delicious sauces.
Think Green (palate cleanser)
This bright, herbaceous creation combines the crisp flavors of seasonal greens, citrus, and aromatic herbs, delivering a burst of freshness with every bite. Often featuring elements like basil, mint, or green apple, it cleanses the palate for the incoming dessert course.
Oops! I Dropped the Lemon Tart
Bottura’s most famous dessert, this dish tells the story of an accidental drop in the kitchen that turned into a masterpiece. A beautifully shattered lemon tart with bright citrus flavors and a perfect balance of sweetness and acidity.

And then there are the mannequins…so lifelike that I genuinely thought they were real for a minute. Dressed stylishly and strategically placed throughout the space, they add a touch of humor and surrealism, blurring the line between art and reality.
