A deliciously simple yet elevated appetizer made with Medjool dates stuffed with creamy Brie, wrapped in crispy bacon, and brushed with maple syrup. Sweet, salty, and the perfect bite for holidays, parties, or cozy gatherings.

Ingredients

  • 12 Medjool dates pitted
  • 4 oz brie cheese cut into 12 small cubes
  • 6 slices bacon cut in half
  • 2 tablespoons pure maple syrup
  • Fresh thyme or flaky sea salt for garnish (optional)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Slice each date lengthwise to create a small pocket (don’t cut all the way through). Remove the pit if it’s still inside.
  • Tuck a cube of brie into each date, pressing gently to close it up.
  • Wrap each stuffed date with half a slice of bacon and place seam side down on the baking sheet.
  • Use a pastry brush to lightly coat each bacon-wrapped date with maple syrup.
  • Roast for 18–22 minutes, until the bacon is crispy and caramelized.
  • Drizzle with an extra touch of maple syrup and sprinkle with fresh thyme before serving.
