Fig Oatmeal Bars

Celebrate fig season with these homemade oatmeal fig bars! Made with fresh figs, oats, cinnamon, and a golden crumble topping, they’re the perfect sweet snack or portable dessert.

Ingredients

Filling

  • ~1 lb fresh figs stem removed, quartered (~2 cups)
  • 2 Tbsp maple syrup or honey
  • 1 tsp vanilla extract

Crust & Topping

  • 1 cup all-purpose flour or whole wheat
  • 1 2/3 cups oats rolled or quick
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of salt
  • ½ cup brown sugar
  • –½ cup melted butter or substitute oil

Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 9×13 pan.
  • In a skillet or saucepan, combine figs, maple syrup, vanilla; cook over medium heat until figs break down and juices reduce (about 8–10 min). For chunkier texture, leave some pieces; for smoother, mash lightly or partially blend.
  • Mix together crust/topping: flour, oats, cinnamon, nutmeg, salt, sugar, melted butter.
  • Press about 2/3 of the oat mixture into the pan as bottom crust. Spread fig filling over. Crumble remaining oat mixture on top.
  • Bake 25–30 min until top is golden, filling bubbly. Cool completely before cutting into bars.
