Cut off the rind and cut brie into cubes. Let brie come to room temperature.
Add brie to the base of a food processor and pulse until smooth and creamy, about 5 minutes, scraping down the sides as needed. Transfer to a serving plate or bowl.
Top whipped brie with honey comb, if using, and drizzle with honey.
Garnish with your favorite fresh herbs.
Notes
Pro tip, you want your brie cold when you cut the rind off. However, it needs to be at room temp before you begin whipping.
