Matcha Gummies

These creamy coconut matcha gummies are a game-changing way to enjoy your favorite superfood.

Ingredients

  • 13 oz organic coconut milk
  • 1/2 cup filtered water
  • 3-4 teaspoons high-quality matcha powder
  • 6-7 Tablespoons honey or maple syrup
  • 5 Tablespoons grass-fed gelatin powder
  • 1 teaspoon vanilla extract optional

Instructions

  • In a small bowl, whisk the matcha powder with a few tablespoons of the coconut milk to make a smooth paste (no clumps!).
  • In a saucepan, combine the water and the rest of the coconut milk.
  • Sprinkle the gelatin evenly over the top. Let it bloom for 5 minutes.
  • Heat gently over low, stirring until gelatin dissolves completely.
  • Remove from heat. Stir in matcha paste, honey, and vanilla. Taste the matcha to see if it is sweet enough and adjust as needed. (Remember: the gummies will taste less sweet when chilled.)
  • Blend together in a blender or with an immersion blender then pour into molds or a small glass dish.
  • Chill in fridge 1–2 hours until set.
  • Slice or pop out, and keep refrigerated (eat within 5–7 days).

Notes

  • If you’re using silicone molds, place them on a rimmed baking sheet before adding the liquid. That way, you can transfer them to the fridge without the molds flopping around and spilling.
