In a small bowl, whisk the matcha powder with a few tablespoons of the coconut milk to make a smooth paste (no clumps!).
In a saucepan, combine the water and the rest of the coconut milk.
Sprinkle the gelatin evenly over the top. Let it bloom for 5 minutes.
Heat gently over low, stirring until gelatin dissolves completely.
Remove from heat. Stir in matcha paste, honey, and vanilla. Taste the matcha to see if it is sweet enough and adjust as needed. (Remember: the gummies will taste less sweet when chilled.)
Blend together in a blender or with an immersion blender then pour into molds or a small glass dish.
Chill in fridge 1–2 hours until set.
Slice or pop out, and keep refrigerated (eat within 5–7 days).
