Ingredients

Matcha Rice Krispy Treats

  • 6 cups Rice cereal
  • 6 tablespoons unsalted butter
  • 10 oz mini marshmallows
  • cups mini marshmallows for extra gooey texture
  • a splash heavy cream or milk
  • 2-3 teaspoons Ceremonial grade matcha sifted, for strong flavor
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Filling

  • Homemade or store-bought strawberry ice cream slightly softened

Instructions

  • In a large pan over low heat, melt: Butter and 10oz marshmallows. Stir until smooth and glossy then add a splash of milk/cream. *Keep heat low—this is key for soft, gooey texture!
  • Sift in: 2–3 teaspoons matcha powder and stir until fully combined and vibrant green.
  • Then add the vanilla extract and a pinch of salt.
  • Turn off heat and gently fold in the rice cereal
  • Once combined, fold in: 1½ cups extra mini marshmallows (this is the gooey magic)
  • Divide mixture evenly between two parchment-lined pans and lightly press into an even layer. (*Do NOT press too firmly!)
  • Let cool completely at room temperature.
  • Spread a thick, even layer of softened strawberry ice cream over the top of one of the pans then smooth it out with a spatula.
  • Carefully lift the second slab of Rice Krispy treats from its pan.
  • Place it on top of the ice cream layer.
  • Gently press down to seal.
  • Transfer the whole slab to the freezer for 2–3 hours, until fully set.
  • Cut into squares or bars.
  • Enjoy!
