Treat yourself guilt-free with these protein-packed chocolate-covered cookie dough bites! Made with creamy cottage cheese, almond flour, and vanilla protein powder, each bite is coated in rich dark chocolate for the perfect blend of indulgence and nutrition.

Ingredients

Cookie Dough

  • 1 cup cottage cheese
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup almond flour
  • 1 1/2 scoops vanilla protein powder
  • 2 tbsp mini dark chocolate chips

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  • In a food processor or blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy.
  • Add the cottage cheese mixture to a medium size bowl. Then add the almond flour and protein powder. Mix until combined. The mixture should resemble a thick cookie dough consistency.
  • Fold in the mini chocolate chips.
  • Portion out the dough into small balls and transfer them to the freezer to firm up for about 30 minutes to an hour.
  • In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals until smooth and melted (be careful not to burn). You could also melt in a double boiler.
  • Using a fork, dip each chilled cookie dough bite into the melted chocolate until fully coated and sprinkle the flaky sea salt before the chocolate hardens. Place them on a lined baking sheet to harden.
  • Once all the bites are coated, transfer the baking sheet in the refrigerator for another 15-20 minutes to allow the chocolate to set.
  • Store in the fridge for up to a week in an air tight container.
