1/4cupmayonnaisepreferably homemade, plus more to taste
1tablespoonDijon mustardplus more to taste
1tablespoonparsley leavesminced
1tablespoonchivesminced
1/2cupred onionfinely diced
1/2cupceleryfinely diced
1garlicminced (about 1 teaspoon)
Instructions
In a large bowl, add 1 Tbsp lemon juice, 1 tsp zest lemon, mayonnaise, mustard, tarragon, parsley, chives, red onion, celery, and garlic and mix with a rubber spatula.
Stir in additional lemon juice to taste.
Add the shredded chicken to bowl with mayonnaise and mix until combined.
Season with salt and pepper to taste.
Add more mayonnaise, mustard, or lemon juice if desired.
