Ingredients

Whipped Edamame

  • 1 ½ cups shelled cooked edamame
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove
  • 2 tablespoons fresh herbs basil, parsley, or mint all work
  • ½ teaspoon sea salt adjust to taste
  • Fresh cracked black pepper
  • 1-3 tablespoons water to blend + adjust texture (optional)

For Serving

  • Toasted sourdough or your favorite bread
  • Olive oil drizzle
  • Lemon zest
  • Chili flakes or hot honey optional

Instructions

  • In a food processor or high-speed blender, combine: Edamame, Greek yogurt, Olive oil, Lemon juice, Garlic, Fresh herbs, Salt + pepper
  • Blend until smooth, adding 1–3 tablespoons of water as needed to get a whipped, creamy texture.
  • Adjust with more lemon juice for brightness, salt for flavor, or olive oil for richness.
  • Spread generously over toasted sourdough and finish with: drizzle of olive oil, flaky sea salt, lemon zest, Chili oil or hot honey for a sweet-spicy kick
