Protein Cookie Dough Bites
Ingredients
Cookie Dough
- 1 cup cottage cheese
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 3/4 cup almond flour
- 1 1/2 scoops vanilla protein powder
- 2 tbsp mini dark chocolate chips
Chocolate Coating
- 1 cup dark chocolate chips
- 1 tbsp coconut oil
Instructions
- In a food processor or blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy.
- Add the cottage cheese mixture to a medium size bowl. Then add the almond flour and protein powder. Mix until combined. The mixture should resemble a thick cookie dough consistency.
- Fold in the mini chocolate chips.
- Portion out the dough into small balls and transfer them to the freezer to firm up for about 30 minutes to an hour.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals until smooth and melted (be careful not to burn). You could also melt in a double boiler.
- Using a fork, dip each chilled cookie dough bite into the melted chocolate until fully coated and sprinkle the flaky sea salt before the chocolate hardens. Place them on a lined baking sheet to harden.
- Once all the bites are coated, transfer the baking sheet in the refrigerator for another 15-20 minutes to allow the chocolate to set.
- Store in the fridge for up to a week in an air tight container.
