Matcha Rice Krispy Treat Strawberry Ice Cream Sandwiches
Ingredients
Matcha Rice Krispy Treats
- 6 cups Rice cereal
- 6 tablespoons unsalted butter
- 10 oz mini marshmallows
- 1½ cups mini marshmallows for extra gooey texture
- a splash heavy cream or milk
- 2-3 teaspoons Ceremonial grade matcha sifted, for strong flavor
- 1 teaspoon vanilla extract
- Pinch sea salt
Filling
- Homemade or store-bought strawberry ice cream slightly softened
Instructions
- In a large pan over low heat, melt: Butter and 10oz marshmallows. Stir until smooth and glossy then add a splash of milk/cream. *Keep heat low—this is key for soft, gooey texture!
- Sift in: 2–3 teaspoons matcha powder and stir until fully combined and vibrant green.
- Then add the vanilla extract and a pinch of salt.
- Turn off heat and gently fold in the rice cereal
- Once combined, fold in: 1½ cups extra mini marshmallows (this is the gooey magic)
- Divide mixture evenly between two parchment-lined pans and lightly press into an even layer. (*Do NOT press too firmly!)
- Let cool completely at room temperature.
- Spread a thick, even layer of softened strawberry ice cream over the top of one of the pans then smooth it out with a spatula.
- Carefully lift the second slab of Rice Krispy treats from its pan.
- Place it on top of the ice cream layer.
- Gently press down to seal.
- Transfer the whole slab to the freezer for 2–3 hours, until fully set.
- Cut into squares or bars.
- Enjoy!
