Cranch or Ranchovy Dressing

Ingredients

  • 1 clove garlic, minced
  • Pinch kosher salt
  • 2 large egg yolks
  • Juice of 1 lemon
  • 2 tablespoons grated Parmesan
  • 1/4 cup extra-virgin olive oil
  • 1 cup buttermilk
  • 1/2 cup sour cream
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp chopped fresh dill
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp thinly sliced fresh chives
  • 1 Tbsp chopped fresh tarragon
  • Freshly cracked black pepper, to taste

Instructions

  1. Crush the anchovies, garlic and salt in a large bowl with a fork
  2. Whisk in the egg yolks, lemon juice and Parmesan
  3. Slowly drizzle in the olive oil and whisk well to emulsify
  4. Whisk in the buttermilk, sour cream, Worcestershire, dill, parsley, chives, tarragon and black pepper to taste
  5. Refrigerate until ready to enjoy!
