Fig Oatmeal Bars
Ingredients
Filling
- ~1 lb fresh figs stem removed, quartered (~2 cups)
- 2 Tbsp maple syrup or honey
- 1 tsp vanilla extract
Crust & Topping
- 1 cup all-purpose flour or whole wheat
- 1 2/3 cups oats rolled or quick
- 1 tsp cinnamon
- ¼ tsp nutmeg
- pinch of salt
- ½ cup brown sugar
- ⅓ –½ cup melted butter or substitute oil
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13 pan.
- In a skillet or saucepan, combine figs, maple syrup, vanilla; cook over medium heat until figs break down and juices reduce (about 8–10 min). For chunkier texture, leave some pieces; for smoother, mash lightly or partially blend.
- Mix together crust/topping: flour, oats, cinnamon, nutmeg, salt, sugar, melted butter.
- Press about 2/3 of the oat mixture into the pan as bottom crust. Spread fig filling over. Crumble remaining oat mixture on top.
- Bake 25–30 min until top is golden, filling bubbly. Cool completely before cutting into bars.
