Thomas Keller’s Whipped Brie: A Luxurious & Easy Spread You Need To Try

If you’re a cheese lover (like me), then Thomas Keller’s Whipped Brie is about to become your new obsession. This creamy spread takes brie to a whole new level, transforming it into a silky, melt-in-your-mouth delight that’s perfect for crostini, crackers, or even a fancy charcuterie board. Best of all? It’s surprisingly easy to make at home.
He creates a more refined version at The French Laundry, his three-Michelin-starred restaurant in Napa. You can recreate it using this recipe or from his cookbook, The French Laundry (which I own and love)—but fair warning, it’s not for beginners! 😉
What You’ll Need
- High-quality brie – The better the brie, the better the whip. Go for a triple cream for an extra creamy texture.
- A sharp knife – To remove the rind (yes, you could keep it, but for that ultra-smooth texture, trimming is key).
- A food processor or stand mixer – This is where the magic happens. A food processor gives you that silky, whipped texture, but a stand mixer with a paddle attachment works too.
- Heavy cream (optional) – Just a splash to get the perfect consistency.
- Toppings (optional, but highly recommended!) – Think honey, fresh herbs, fruit jams, crushed pistachios, caramelized onions, chopped crispy bacon, or flaky sea salt for that extra wow factor.
Ways to Enjoy It
- Slather it on warm baguette slices or toasted sourdough – Trust me, it’s a game-changer.
- Pair it with fruit & nuts – Grapes, figs, almonds… chef’s kiss!
- Drizzle with honey – A little sweet + savory action is always a good idea.
- Use it as a sandwich spread – Elevate your lunch game instantly.
A Taste of The French Laundry at Home
Thomas Keller’s Whipped Brie is the easiest way to elevate your cheese game, it’s luxurious, creamy, and totally irresistible. Whether you’re hosting a dinner party or just treating yourself (because you deserve it!), this recipe is a must-try.
