Fluffy Seagull Iced Latte (Aka Fluffernutter Latte)

If you’ve been on social media lately, you’ve probably spotted the Fluffy Seagull Latte, a dreamy drink first created by the talented team at Lighthouse Keeper’s Pantry in Cape Cod, that went viral this Summer.
This coastal coffee also gives a wink to New England’s famous Fluffernutter sandwich, a peanut butter and marshmallow fluff combo that originated in Maine over a century ago. I couldn’t resist creating my own version that uses with real, high-quality ingredients, plus a marshmallow fluff–coated cup for a playful nod to the Fluffernutter legacy.

Fluffy Seagull Latte
Ingredients
- 2 shots espresso
- 1 Tbsp natural peanut butter
- 1/4 tsp of Vanilla powder or 1 tsp vanilla bean paste
- 1 –2 Tbsp simple syrup or maple syrup/honey
- Pinch of flaky sea salt
- 1/2 cup whole milk or milk of choice
- Marshmallow fluff to coat your cup
Instructions
- Prep the Cup: Spread marshmallow fluff around the inside of your glass.
- Add peanut butter, vanilla, sea salt to cup.
- Brew the hot espresso over the peanut butter mixture.
- Use frother to mix everything together. Add your milk and taste for sweetness level.
- Fill the cup with nugget ice and pour the peanut butter espresso into the marshmallow-coated cup.
