Ingredients
Whipped Edamame
- 1 ½ cups shelled cooked edamame
- 2 tablespoons plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 small garlic clove
- 2 tablespoons fresh herbs basil, parsley, or mint all work
- ½ teaspoon sea salt adjust to taste
- Fresh cracked black pepper
- 1-3 tablespoons water to blend + adjust texture (optional)
For Serving
- Toasted sourdough or your favorite bread
- Olive oil drizzle
- Lemon zest
- Chili flakes or hot honey optional
Instructions
- In a food processor or high-speed blender, combine: Edamame, Greek yogurt, Olive oil, Lemon juice, Garlic, Fresh herbs, Salt + pepper
- Blend until smooth, adding 1–3 tablespoons of water as needed to get a whipped, creamy texture.
- Adjust with more lemon juice for brightness, salt for flavor, or olive oil for richness.
