How To Make Merriman’s Iconic Mai Tai With Honey-Lilikoi Foam

After visiting Maui many times, I can confidently say I’ve tasted my fair share of Mai Tais, and Merriman’s Mai Tai is hands down one of the BEST I’ve ever had!
With its perfect blend of Hawaiian rum, macadamia-nut orgeat, and a refreshing honey-lilikoi foam, this cocktail will transport you straight to Maui, even if you’re sipping it from your own kitchen. The flavors are tropical, smooth, and just the right mix of sweet and tangy. If you’re looking for a cocktail that encapsulates the essence of Hawaiian paradise, this is it.

Merriman’s Mai Tai
Ingredients
Cocktail
- 1 oz. Light Rum Kula Rum or Old Lahaina Rum
- 1 oz. Dark Rum Kula Rum or Old Lahaina Rum
- 1/2 oz. macadamia-nut orgeat
- 1/2 oz. Orange Curaçao
- 3/4 oz. fresh lime juice
- 4 slices Pineapple garnish
Honey Liliko'i Foam
- 1/2 oz. honey
- 1 oz. liliko‘i purée passionfruit
- 1 oz. simple syrup
- 1 oz. egg whites
- 1.5 oz. cold water
Instructions
- Mix foam ingredients well and put into isi whip and fill to half capacity. Use 4 charges for a liter-sized infuser. (Or blend ingredients on high speed till foamy.)
- Add lime juice, orgeat, orange curaçao and light Rum to a mixing glass.
- Shake with 1 cup cubed ice about 30 seconds and pour into a highball glass.
- Float the dark rum on top.
- Top with honey-liliko‘i foam
- Garnish with pineapple half moon.
