Brown Butter Pistachio Rice Crispy Treats

If you thought rice crispy treats couldn’t get any better, think again! Today, we’re giving this childhood favorite a fun, flavorful upgrade with the magic of pistachios. Whether you’re a pistachio lover like me (half Italian and totally obsessed with anything pistachio) or just looking for a fun twist on a nostalgic snack, these pistachio rice crispy treats are going to be your new obsession.

Why Pistachio?

Pistachios add a delicious, nutty flavor that pairs perfectly with the sweet, gooey marshmallows and brown butter. Plus, I’m using Pistakio, an incredibly delicious pistachio spread made by a small company founded by Italian immigrants. Pistakio is my current favorite because it’s sweet, salty, creamy, and has that authentic pistachio flavor that you just can’t beat. It’s seriously my secret weapon for adding that extra special touch to vanilla ice cream, toast or swirling into my afternoon latte.

Most pistachio spreads that we find here in the states are imported and can only be found in specialty stores. The imported brands are usually very expensive and don’t even taste that pistachio-ey. I also like this company, Fine & Raw, who makes a pistachio spread and a healthier Nutella without seed oils!

How to Make These Pistachio Rice Crispy Treats

It’s super easy! You’ll just follow the classic rice crispy treat recipe, but with a fun pistachio twist. Melt butter and marshmallows in a large pot, stir in a generous scoop of Pistakio pistachio spread, then fold in the rice cereal. Spread the mixture into a pan and let it cool for a few minutes while you mix together melted white chocolate and more Pistakio for a creamy flavorful topping then add chopped pistachios to finish. You’ll get that perfect chewy, crunchy texture with an added layer of creamy pistachio goodness…it will hit all your taste buds.

Pistachio Rice Crispy Treats

Ingredients

Topping:

  • 1 cup white chocolate chips
  • 1/3 cup pistachio spread
  • 1/4 cup roasted and chopped pistachios

Instructions

  • Butter an 8 x 8 baking dish
  • Next add the butter to a large pot and brown the butter over medium heat, stirring constantly, until a deep golden brown color (about 5 minutes)
  • Remove from the heat and add in your marshmallows, stirring until melted
  • Then add in your pistachio spread, vanilla and salt until melted
  • Add the rice cereal and mix well
  • Press the mixture into your prepared dish
  • Set aside while you melt your chocolate and Pistakio spread in 20 second increments in the microwave (or you could use a double boiler to melt the chocolate), stirring between each go around. *Be extra cautious, as white chocolate could burn if too high heat in the microwave*
  • Spread evenly over the treats and top with chopped pistachios
  • Let the chocolate set completely before slicing or enjoy right away for a ooey gooey treat!
