A good 60–70% dark chocolate gives you a nice balance.

Add the Cookie Crumbs Immediately

The chocolate needs to still be melted when you add the crushed Sweet Thins so they stick to the surface.

Ingredients

  • 12 large soft Medjool dates, pitted
  • 1 box Simple Mills Honey Cinnamon Sweet Thins
  • ½- 1 cup marshmallow fluff
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 teaspoon coconut oil

Instructions

  • Line a baking sheet with parchment paper.
  • Open each Medjool date and remove the pit then place the dates on the parchment and cover them with another sheet of parchment.
  • Using the bottom of a glass or measuring cup, firmly press each date until it’s flattened.
  • Add a spoonful of marshmallow fluff over each date. Spread it gently, leaving a small border around the edges.
  • Place two Simple Mills Honey Cinnamon Sweet Thins on each date and gently press it into the marshmallow fluff so it stays in place.
  • Place the dark chocolate and coconut oil in a microwave-safe bowl and microwave in 20–30 second intervals, stirring between each, until completely smooth.
  • Drizzle or spoon the melted dark chocolate over each marshmallow-topped date.
  • Immediately sprinkle crushed Simple Mills Honey Cinnamon Sweet Thins over the chocolate while it’s still melted.
  • Place the baking sheet in the fridge or freezer for 15–30 minutes, or until the chocolate has completely set.
